Lamb Chops with Fresh Mint Sauce

Ingredients
2 Tbs cracked black peppercorns
2 tsp coarse sea salt
1 tsp garlic powder
1 tsp onion powder
4 Tbs vegetable oil, divided
2 racks lamb rib chops, cut into double chop
rosemary sprigs, for garnish
Directions
- Preheat oven to 425° F. In a small bowl, combine peppercorns, salt, garlic powder and onion powder. Stir in 1 tablespoon of oil, and rub the mixture over all sides of the lamb. Heat an ovenproof skillet over high heat. Add remaining oil. Sear the chops on both sides for about 2 minutes per side. Place the skillet in the oven for 10 minutes for medium-rare or 15 minutes for medium. Remove the lamb from the oven, and let rest for 10 minutes. Garnish with rosemary, and serve with Fresh Mint Sauce.
